Beef…it’s what’s for dinner!

So I didn’t post my menu this week…but tonight is my Padre’s BDay and I’m cookin’ up something special. Beef tenderloin with a walnut/horseradish sauce and grilled veggies, straight from the garden.

I was never very good at grilling steaks and I suppose I could chalk it up to it having been my Dad’s job my whole life…but I’ve never really been good at sitting back and making excuses. This is where Anthony Bourdain came in…geez I love that man! Cynical, weathered, worldly, witty and the man can cook! I must have missed the lesson about letting meat rest…I’m so OCD that I’ve always hacked into my gorgeous cuts of meat without letting the juice and spices do their job. About a month ago, when I came to this shocking and very well known conclusion I gave it a go and came up with the most beautiful medium rare steaks. Delicious, juicy and uber flavorful.

So tonight, in homage to my Pops, I will do the grilling and I’ll do it right! And it is definitely going to help that my Mom is bringing a ridiculously awesome red velvet cake from a bakery outside of Houston. Mmmm…I’ll take many pics and see if I can find my silly camera cable (which manage to lose at least twice a month!)
