Menu Monday…
I just completed the ‘ole shopping list for this weeks dinner menu and it looks a little something like this…
Monday- green chicken curry with jasmine rice
Tuesday- italian meatloaf (made with ground elk) with caesar salad (homemade caesar dressing of course)
Wednesday- bbq pork chops with hot german potato salad and cole slaw
Thursday- green chile-chicken casserole with side salad with chile-garlic vinaigrette (homemade dressing again)
Friday- stuffed portabello mushrooms with olives and caramelized onions with vegetable cousous
So I’m trying to keep up doing one vegetarian day/week AND last week we got 2 bags of ground venison and ground elk. Both are super awesome lean meats. For the 4th of July I made elk burgers and I forgot just how lean the meat is…the burgers ended up being HUGE! But quite tasty. I also made some side dishes…grilled zucchini, sweet potato fries and potato salad. I’m going to try to quit saying “homemade” all the time…you can just assume unless I state otherwise that everything is made fresh by me. And if you were wondering where I get my recipes…pretty much everything I make is from Cooking Light, either the magazine or one of the amazing books. I just bought the comprehensive cookbook, which is great for technique or just to see how to lighten some everyday favorites (ie-macaroni and cheese, potato salad, meatloaf, CHEESECAKE, chocolate chip cookies and even sauces like spaghetti sauce, salsa, and many salad dressings). It’s a keeper.
**Warning…I need to vent about Monday. It started out as a good day. I got a call about doing a week long legal temp job with amazing pay. And I was going to buy my plane ticket to California to see the Rockstar next week. It took about 10 minutes for ALL of that to end up in shambles. The temp people called and changed their mind since I couldn’t make it TODAY. They expected me to get 2 hours away, looking business casual in 45 minutes. So since I couldn’t make it I got the axe on that gig. Then I talked to my boss (who is coincidentally the Rockstars boss and step-father) who informed me that he’s probably bringing him home early. Probably in the seismic world means ???? So there goes a good paying job and my vacation all in one fail swoop and before noon nonetheless. Awesome day.
